Maple Sugar Muffins

Prep: 15 minutes Bake: 12 minutes

1 8-oz carton dairy sour cream
1 egg beaten
1 cup granulated maple sugar or 3/4 cup
granulated sugar plus 1/4 tsp. maple flavoring
1/2 tsp. ground allspice
2 1/4 cups all purpose flour
3/4 cup baking soda
1/8 tsp. salt

Preheat oven to 375 F . Grease a very large baking sheet. Set aside
In a large bowl combine sour cream, egg, maple sugar, and allspice. In
a medium bowl stir together flour, baking soda, and salt. Add the flour
mixture all at once to the sour cream mixture. Stir just until combined.
Turn dough out onto a well-floured surface. Knead 10 to 12 strokes. Pat
on lightly roll dough to a 1/2 thicknes. Cout dough with a floured 2 1/2-inch
round cutter. Place muffins on prepared baking sheet.
Bake to 12 to 15 minutes or until bottoms of muffins are brown. Transfer to
a wire rack to cool slightly. Serve warm. Makes 14 muffins.
